Chicken Breasts Cooked In Parchment Paper

I just cannot believe how easy it is to cook a meal in parchment paper.  The chicken breasts came out very tender and flavorful. If you have not tried this
method of cooking before you might want to give it a try.

INGREDIENTS

  • 2 Chicken Breasts
  • 8 Strips of Organic Bacon
  • ½ Cup Chopped Green Onions
  • 6 Chopped Garlic Cloves
  • 1 Cup Salsa
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Freshly Ground Pepper
  • 1 Chopped Jalapeno Pepper

DIRECTIONS

Preheat your oven to 350° F.  In two large pieces of parchment paper place 4 strips each of the organic bacon.  On top of the bacon sprinkle the chopped green onions, chopped jalapeno and chopped garlic.  Place the chicken breasts on top of the bacon pile and salt and pepper the tops of the chicken.  Place ½ cup salsa on top of each chicken breast.  Close up the parchment paper up around the contents and tie the top with butcher string.  Place in a baking pan and cook for 1 ½ hours.  Remove from the oven and let sit for 5 minutes.  Open the parchment packages and transfer to either a serving platter or individual plates.  Serve with a green salad and diced pineapple.  Serves 2.

What a neat idea! Did juices bubble up through the bunched up opening on the top? Did the meat stick to the paper?

The juices don't seem to bubble up through the bunched opening at the top or anywhere for that matter. The meat doesn't stick to the paper either. Just one question about the time - 1-1/2 hours? It would seem that the chicken would be overly done, tough and dry for only two breasts. Is this time accurate?

Are you talking about boneless, skinless chicken breasts? 1 1/2 hours does seem like a long time.

Thanks for the questions Kenneth and Joan. I tend to like to use very large bone-in chicken breasts in this dish. The chicken didn't come out tough or dry at all and actually was very moist. One of the things that I point out on my site is that "all ovens are not created equally." Ovens vary in temperature even though one turns it to the correct temperature given in any recipe. That being said, I am sure that 45 minutes to 1 hour would most likely be sufficient. If you try the recipe please let me know how it turned out.

This is such an awesome recipe for me and my boyfriend! We just started working out together, so we need plenty of protein and this sounds so healthy and tasty. Have you ever made beef wellington? I tried it and it was a disaster, haha, not my best dish.

what is Parchment Paper and where would one get some?

It is paper that is typically used to line a pan for baking. It's similar to wax paper - without the wax! You should be able to find it in the supermarket aisle with aluminum foil & plastic wrap; however, I got mine at Christmas Tree Shop :)

Emily, if you want to make this a lower fat dish skip the bacon and take the skin off of the chicken breast. Try and use chicken breasts with the bone in. I think that it tastes better. Yes, I have made beef wellington before. It's not such an easy dish to make. One of those dishes bettered ordered in a restaurant I think.

James, Aimee is correct that parchement paper is typically used for baking. It is similar to wax paper, but DO NOT use waxed paper. I pick my parchment paper up in the supermarket aisle with the aluminum foil. It is always there. Just be careful not to pick up the waxed paper instead.
